It is a partially buried contemporary building that is integrated into a natural environment surrounded by an oak forest and cereal fields.
Tandem is a design by two young Navarrese architects: José Luis Vélaz Ballesteros and Iván Fernández Prados. Facing North, the winery has been built entirely in concrete, so that the most optimal temperature for the production and aging of the wines is naturally maintained.
It highlights a large front skylight that lights up at night, recalling the ancient custom of the Camino de Santiago when churches and hermitages illuminated their towers to attract pilgrims on their way to Compostela.
The preparation is carried out on two levels:
- On the upper level the grapes ferment in stainless steel tanks with bazuqueo pistons. Through the bazuqueo or pigeage system, the full potential of the grapes is extracted gently and slowly. This way of working the grapes allows us to obtain pleasant and elegant wines.
- On the lower level are the concrete tanks to which we transfer the wines by gravity. The wines rest in these tanks before beginning their aging in barrels. The concrete presents impeccable storage conditions.
Our wines are not clarified or cold stabilized and, in order to make them reach the market in their best conditions, they are not filtered either. As part of our firm commitment to quality, we age our wines in 300-liter French oak barrels that we renew every 3 or 4 years.
